Chopping tenons. The nice thing about skin-on-frame is that unlike most other types of woodworking the joints being a little bit sloppy is actually a good thing. Skin boats barely flex, but they do so with tremendous force and in that context furniture-grade joints risk failure. Not having to stress over every millimeter makes the whole process quick, easy, and beginner friendly.
